USA, MN: Gambit Brewing Company hoping for mid-January opening in St. Paul

Downtown St. Paul, which has lost a few breweries in the past few years, is getting a new one in Gambit Brewing Company, Yahoo News reported on December 9.
Gambit will occupy the space formerly occupied by 12welve Eyes Brewing in the Pioneer Endicott building on Fourth Street between Robert and Jackson streets.
Owner Josh Secaur brewed for three years at Bobtown Brewery, a brewpub in Roberts, Wis. He said he’d been looking for a space of his own and couldn’t turn down the turn-key brewing operation left behind by 12welve Eyes.
“It turned into something we really couldn’t say no to,” Secaur said.
Secaur said he loves the layout of the 94-seat, garden-level space, so he won’t change that but will make some changes to the aesthetics.
“We’re just going to cozy it up, make it a little more of a speakeasy, loungey, laid-back vibe,” he said.
As for beers, Secaur said that coming from the brewpub world, he’s used to creating a wide variety of beer, and he’ll continue on that trajectory.
“We want this to be a gathering space for the building and the community,” he said. “We’ll let them drive what the tap list ends up as.”
He’s hoping to book food trucks in the spring, but in the meantime, Secaur said the brewery would partner with Wisconsin and Minnesota producers to offer a build-your-own charcuterie board menu.
Secaur is shooting for a mid-January opening.
